What this tour is about: The character of cuisine in India is essentially regional. The size and diversity of the country has forced every area to develop a cuisine of its own. In earlier eras, transportation was a problem, so each area had to come up with a style of food inspired by locally available materials. As a result, not only dishes, but flavours, colors, methods of cooking, and even the style of cutting vegetables change as often as the landscape does.
Rajasthan’s cuisine has evolved from its need to reduce the amount of water used for cooking. Given the harsh desert terrain, foods that delivered high nutritional value, which could be stored for long periods of time, and which used locally available ingredients were created. Rajasthani cooking is largely vegetarian, but each meal is not dominated by vegetables. Instead, milk, buttermilk and other milk products are used widely in the cuisine, so are various pulses and millets.
